1. Granita



Granita is a Sicilian dessert that resembles ice shavings in texture. Water, ice, and sugar, along with some fruity flavors, make up this unique cooling dessert. Here we’ve added booze for some ‘adulting’.



Rio Royale Granita


If you aren’t a part of the generation that chomped its way through ice shavings, then this dessert will be quite a revelation for you! Light pink in color, it’s got a nice boozy aftertaste. You can buy booze from our online liquor store.


Ingredients

  • 12 oz. water
  • 16 oz. Champagne
  • 4 oz. Cedilla Liqueur de Açai 
  • 4 oz. sugar



Steps


  • Boil water and sugar to make simple syrup.
  • Mix the syrup with Champagne and liqueur in a shallow dish.
  • Freeze the dish.
  • Just as ice crystals begin to form, begin to scrape the mixture with a fork every 20 minutes or so.
  • To ensure even freezing, scrape the sides and bottom of the dish.
  • Serve the granita when it is completely frozen. 


Pomegranate Granita



Made with pomegranate concentrate and vodka, this granita has a brilliantly appetizing carmine color. So scoop up a spoonful of this delectable frozen treat and enjoy the subtle alcoholic notes!

Ingredients

  • 16 oz. thawed pomegranate concentrate
  • 16 oz. water
  • 4 oz. vodka 
  • 8 oz. sugar

Ingredients

  • 1½ lbs. strawberries
  • 5 oz. brown cane sugar
  • 5 oz. water
  • 2 in. lemongrass
  • 7 oz. Sauvignon Blanc 



Steps

  • With a rolling pin, crush the lemongrass to release the essential oils.
  • Make a simple syrup with sugar and water. Boil together until the sugar dissolves.
  • Add the lightly crushed lemongrass and simmer for five minutes.
  • Turn off the heat and allow the lemongrass to continue releasing its essential oils into the hot water.
  • When completely cool, remove the lemongrass pieces.
  • Muddle the strawberries in a cocktail shaker.
  • Combine the lemongrass-infused simple syrup with the Sauvignon Blanc.
  • Warm-up your biceps to shake the cocktail shaker vigorously.
  • Pour the mix into ice-pop molds.
  • Freeze for 6 hours. 
  • Serve cold.

 

3. Ice Cream



Growing up, ice cream may have been that rare Sunday treat. Not like the end to every meal as it has become today! However, as a frozen dessert, nothing beats the quintessential ice cream scoops in a bowl.


Rum & ginger ice cream with chocolate rum sauce

Rum and ginger are compatible fellows. They make plenty of lovely cocktails, and the taste has been replicated in the yum frozen dessert.

Ingredients


For the Ice cream:

  • 1 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1 tbsp freshly grated ginger
  • 2 tbsp dark rum
  • 4 oz. sour cream
  • 4 oz. whole milk
  • 8 oz. heavy cream
  • 8 oz. cream cheese
  • 8 oz. granulated sugar


For the chocolate sauce:

  • 1 tsp vanilla extract
  • 2 oz. dark rum
  • 2 tbsp light brown sugar
  • 4 oz. heavy cream
  • 6 oz. chopped semisweet chocolate


Steps

To make the ice cream:

  • Heat the heavy cream in a saucepan.
  • Remove from heat when it simmers.
  • Then add the ginger.
  • Allow the ginger to release its flavor for 10 minutes.
  • Then strain out the ginger. You can taste a little to check if it is gingery enough.
  • Let the cream cool to room temperature.
  • In a blender, mix the ginger-infused cream, vanilla extract, sour cream, sugar, cream cheese, milk, and salt until combined.
  • Chill the mix for at least two hours.
  • Stir in the rum.
  • Churn the ice cream for 20-25 minutes.
  • Freeze the ice cream for 4 hours before serving.


To make the chocolate sauce:

  • Heat the cream and light brown sugar together.
  • Let the sugar dissolve.
  • When the cream starts to bubble, turn it off.
  • Pour the hot cream over chocolate in a heat-proof bowl.
  • Whisk the mixture until smooth.
  • Combine the rum and vanilla extract.
  • Whisk.
  • Serve over ice cream.

 

4. Sorbets

Sorbet is another version of the granita, except that the ice isn’t shaved. This frozen dessert is light, easy to make, and the humbler version of ice cream. In a pandemic era, conveniently order the liquor online!
